Original Chicken Salad


I feel like we are finally in the swing of things after a big move, back to school, new jobs, and having lots of lovely guests come to visit this summer--PHEW! With that, we are settling in to a routine & damnit it feels good! That means meal planning and of course, packing lunches. If you're anything like me lunch is my least favorite meal, hence my uninspired attitude towards packing them.


However, this chicken salad recipe brought a little life to my lunch plate this week -- so much so that it was worth a share! I made a large batch for Rich to take to work, and some for me to make while I work from home. The best part: it took me less than 15 minutes! You can make your own chicken or make things even easier and get a rotisserie chicken from the grocery store.


Ingredients:

2 cups chopped chicken

1/2 cup mayo

1 green onion, chopped

1 stalk celery, chopped

1 tsp dijon mustard

1 tsp RMR Original

1/2 tsp Hickory Smoked Sea Sat

pepper to taste

sprinkle of celery salt or dill (optional)


Directions:

Mix all ingredients together in a bowl, sprinkle dill or celery salt if you'd like.


Serve cold over a salad or on a sandwich.
